My name is Julie Herson and I love salt and I love chocolate. This is my experiment in bringing these two loves together. Though classically trained at the Culinary Institute of America, my passion has strayed from the traditional. Rather than executing the storied French truffle, my aim is to rethink what makes the truffle so divine and delicious. I want to shift the paradigm of chocolate into a postmodern realm dominated by flavor, not fashion, intensity, not optic perfection. Forget fancy paint and contrived molds. My chocolate is unapologetically bold, imperfectly handsome, and vividly persistent.
Aside from all that intellectual blather . . . I just really like making truffles and experimenting with flavors and textures. And, I'm lucky enough to have a lovely husband who doesn't mind being my taste-tester, IT guy, psychiatrist, sous chef, and whatever else I may need. Salt Side Down Chocolates is truly a labor of love for both of us.
