Welcome to Salt Side Down Chocolates, a new kind of chocolate truffle company and the only way to indulge!

It's simple, we take only the finest dark chocolate, sourced from the rare heirloom varieties of cacao, and mix in only the freshest local cream. Then, we add a concentrated dash of flavoring, be it a reduction of local Late Harvest Zinfandel or an infusion of umami, and proceed to hand roll each and every truffle. To finish the truffles, we insist on two things: first, a hand-dipped dark chocolate coating to add a textural contrast to the silky inner ganache; second, a garnish of artisan sea salt to brighten the palate and invigorate the chocolate experience. The resultant mouthfeel and flavor is simply superlative.
 

The "Salt Side"

What is the "Salt Side"? This refers to the top of the chocolate truffle, where a sprinkling of exquisitely delicate sea salt lies in wait. Not just a pretty garnish, the salt is the gateway to a new way of eating. "Down" specifies the direction in which the owner of the truffle should direct the top when placing it onto their waiting tongue.

Evolution

Salt provides both a flavor and a textural component.  But, eating the truffle in a typical fashion dissolves the salt too quickly.  Placing the "Salt Side Down" on your tongue ensures both of these experiences.
